This salad is ready in under 20 minutes and stays fresh in the fridge for 3 days
Ingredients
- 1 cup cooked quinoa (cooled)
- 1 small cucumber, diced
- 1 medium tomato, diced
- 1/2 red bell pepper, diced
- 2 tbsp olive oil
- Juice of 1 lemon
- Fresh parsley, chopped
- Salt and black pepper to taste
Directions
1. Put the cooked and cooled quinoa in a large bowl.
2. Add the diced cucumber, tomato and bell pepper.
3. Pour the olive oil and lemon juice over the salad.
4. Season with salt and black pepper.
5. Add the chopped parsley and mix gently until everything is combined.
6. Serve immediately or keep in the fridge for up to 3 days.
Tip
Add chickpeas or feta cheese on top for extra protein and flavor.
